This afternoon I made "Not Salmon Pate"--it's a variation of Jennifer Cornbleet's "Not Tuna Pate" (see Feb. 12th's entry entitled "Mock Tuna Salad"). Basically, you add carrots and dill and it looks a lot like salmon! Pictured here is my sandwich which we had for dinner tonight. I took two thick flax seed crackers and spread each of them with hummus. Then I spread on a scoop of the not salmon pate and layered sliced tomatoes, avocado and alfalfa sprouts, ending with a sprinkle of salt and pepper. While the flat bread doesn't contain the sandwich contents as well as regular bread, it still tastes yummy! And it was an easy dinner to throw together! (I cheated and paired our sandwiches with regular cooked tomato soup, but pretty soon I'm going to start experimenting with raw soups!)
